10 MINUTE COUSCOUS SALAD

This simple yet delicious salad is perfect for any season and every occasion!

Serves 1

INGREDIENTS:

2/3 cup couscous

1 cup water

2-3 tbs olive oil

1 tbs low fat feta cheese (optional)

1 spring onion/white onion finely chopped

1/2 tsp crushed garlic

1 tomato, chopped

Half a capsicum, chopped finely

1 cucumber, chopped

A handful of chopped parsley

1/2 tsp chilli flakes

1/2 tsp salt

2 tbs lemon juice

Preparation:

Bring the water to boil in a saucepan and add the couscous. Simmer for 10-12 minutes while stirring frequently, until the couscous has absorbed the water. Leave to stand for 10 minutes and then fluff up with a fork.

Transfer the grain into a mixing bowl and add all of the ingredients. Mix well and season to taste. You can substitute the feta with mascarpone or any other soft cheese.

Tip: Couscous is a versatile pasta. Yes that’s right. It’s a pasta, not a grain! It’s easy to work with and goes well with a range of ingredients so you can always substitute or add to the ingredients mentioned. Olives, jalapenos, corn, carrots, mushrooms are other fun ingredients that you can add.
